Healthy Recipe: Steamed Fish

Steamed Fish in a Bag –

Fish doesn’t just taste good. It contains plenty of protein, vitamins, minerals and omega-3 fatty acids, which promote heart and brain health. That’s why the American Heart Association recommends eating fish two to three times a week. Plus, this recipe adds vegetables and seasonings that help turn the fish into an even better meal. Steaming keeps the nutrients intact and avoids the negative aspects of deep frying, which can turn a healthy dish into an unhealthy one.  Try this steamed fish recipe!

Ingredients

• 4-6 ounces white fish fillets, such as tilapia, cod or snapper
• 1/4 tsp. sea salt
• 1/8 tsp. freshly ground black pepper
• 1/4 cup white wine or champagne (optional)
• 2 large lemons juiced, about 1/4 cup
• 4 tbsp. grassfed butter or olive oil
• 8-9 fingerling potatoes, sliced thin
• 9-10 asparagus stocks, shaved thin
• Small handful of spinach

Directions

1. Preheat oven to 400 degrees. Prepare you packets for baking by tearing 4 sheets of parchment paper 12 inches long. Slice the potatoes and asparagus thin; if using thin asparagus they should be fine whole. Place a thin layer of potatoes on the sheets and season with salt and pepper. Lay 1 fillet on top of the potatoes and distribute the remaining ingredients on top of the fillets.

2. Fold the paper over to form a packet and fold the edges, crimping tightly. Use straight pins or toothpicks to tightly secure the edges so there are no gaps.

3. Lay on a large cooking bag and bake 15-20 minutes until the packets puff and the fish is no longer translucent inside.

4. Watch out for the steam that might escape while opening the packets. Slide the opened packets onto plates and serve immediately.
