Healthy Recipe: New Orleans BBQ Shrimp

With its international reputation as a center for great jazz, colorful lifestyles, and annual Mardi Gras celebration, Louisiana’s largest city has a personality bigger than its 2010 Super Bowl winning Saints. Get a taste of the Big Easy’s flavorful cooking with this New Orleans classic: barbecued shrimp and grits. Cooking up this dish just takes a couple pans, a cutting board, and a touch of creativity.

Simply start with a pan of chicken broth, letting it simmer and adding some milk along the way, which will give your grits creaminess and help them taste better. Better to add the milk before stirring in the grits. Watch the heat, though, because if the milk boils over you’ll have a mess. A bad-tasting mess. Keep stirring the grits as well to avoid them getting too lumpy. Finally, add some butter (two tablespoons) and parmesan cheese (two ounces). It will give them a classic flavor that will add more zest to this otherwise ordinary staple of Southern life.

While you’re coaxing your grits to maturity, you should have a pan warming with a bit of oil to cook the shrimp. It will only take two to three minutes per side, depending on the thickness of the shrimp. The easiest way to tell is when one side is pinkish white while the other is still opaque. Flip the pink side down. While the shrimp is finishing, prepare a sauce for it with touches like garlic, hot sauce, Creole seasoning, chili powder, paprika, and lemon juice.
