Healthy Recipe: Greek Baked Cod with Feta Smashed Potatoes

Cod ranks in the top 10 most popular fish and why not?

It’s tender and flavorful and pairs well with other sides. In this case, one of the best sides you will ever taste. Potatoes may rate on the ho-hum scale for some, but wait until they try these seasoned delights that end with feta cheese sprinkled over them.

Hope you’re getting hungry just thinking about it.

Actually, the potatoes get top billing in the process. They have to be boiled, poked and prodded, and then microwaved for 8-10 minutes.

Hope you’re good at multi-tasking?

While the microwave is running, you’ll need to cover a baking sheet with foil and preheat your oven to 400 degrees. Once the potatoes are out, use the back of a spatula or a potato masher to smash the potatoes. Next, you’ll be slicing up garlic cloves and adding to a bowl with olive oil, salt and pepper, oregano, and the zest of a lemon. After drizzling all this over the potatoes, it’s 10 more minutes in the oven.

Meanwhile, heat some oil in a pan to cook the cod. It will be coated on both sides with a mix of flour, salt, pepper, onion powder and garlic powder. Drop a small piece of fish in the oil to make sure it sizzles. While the first side fries, make a marinade with olive oil, parsley, fresh lemon juice, and either chopped garlic or garlic powder.

Before it’s all over, the marinade will go over the cod and the feta over the potatoes.
