Healthy Recipe: Creamy Balsamic Chicken with Roasted Potatoes

Love this chicken!

Americans love their chicken, consuming close to 100 pounds per person annually. Something that common may seem ordinary, but only because you haven’t tried this kind of chicken. It’s cooked on a stove top with a powerful seasoning sauce and the vinegar that has become today’s go-to ingredient for salad dressings and marinades: balsamic. Then this recipe takes things a step further, adding a healthy heaping of heavy cream that will have you begging for seconds!

Use red potatoes

With this dish, start with potatoes since they take the longest.

I like red potatoes, but you can choose your favorite. Cut into quarters to make them easier to deal with, then toss them in a bowl with a tablespoon of pesto, a dash of olive oil and two tablespoons of shredded parmesan. Blend everything together by hand to thoroughly mix in the pesto. Put them in an oven for 15-20 minutes. When the timer goes off, pull them out, turn them over and cook for another 15 minutes.

While the potatoes are cooking, take a large chicken breast and slice it in two or three pieces of similar thickness. On a cutting board make a mixture of flour and seasonings like salt, pepper, garlic powder and cayenne. Put the breast pieces in the mixture, shake off the excess and cook for 3-5 minutes per side.
But that’s not all. While the chicken’s cooking, chop some kale and shallots to be added later.
